Soy sauce is usually anonymous.Grain from one country, soy from another, fermentation somewhere else.Eighteen Moons is different.Our soy sauce is brewed in Melbourne using Australian wheat and soybeans, then fermented slowly for at least eighteen lunar cycles before bottling.Each batch is small. Some seasons produce none.
